Challenges
With very low volumes, how can we create a blend that will appeal to novices and connoisseurs of aged spirits alike? Competition from Cognac’s big brother is fierce, both nationally and internationally, so how can we stand out from the crowd?
My approach and solutions
I began with an in-depth analysis of the specific needs and challenges faced by the Château Haut-Grelot team.
We organized an initial contact, followed by tastings of the batches of eau-de-vie stored at the Marcillac distillery to assess their potential. Several blending proposals were drawn up for the VSOP and XO profiles, to meet the public’s diverse expectations.
I then combined traditional and modern techniques, inspired by the methods used for Cognac and Armagnac, to guarantee blends of optimum quality.
Finally, comparative tastings were carried out with all stakeholders to validate final choices and refine aromatic profiles.
Results
✔️ Choice of blends from the panel made by myself
✔️ 2 very aromatic and balanced blends obtained
✔️ Blends currently being developed and matured for bottling in the 1st half of 2025.
