Objectives

  • Expand the range by creating rosé wines in reds
  • Diversify sales away from pineaux and cognacs
  • Promote vins de bouche in a region where the vines are oriented towards distillation wines.

Issues

With 2 hectares of red grape varieties (Merlot, Cabernet Franc and Cabernet Sauvignon), Dimitri has too many volumes for sales of red pineau, the only current outlet for juice from red grape varieties.

My approach and solutions

I began with an in-depth analysis of the customer’s needs and problems, and then proposed to enhance the value of red grape varieties by creating a new range of wines.

I then supported the customer in setting up technical itineraries to produce quality rosé and red wines. I also provided support for key operations such as pumping-over and racking.

Throughout the process, I carried out technical tastings and made decisions based on the results obtained. Finally, I provided strategic advice on the overall management of the winery, as well as on pineau and cognac stocks.

Results

✔️ Creation of a range of vins de bouche with one rosé and two red wines.
✔️ Optimization of cellar operations
✔️ Wines still maturing for bottling in 2025
